Lechon Paksiw
Originally a way to enjoy leftover roast pork,
lechon paksiw involves re-cooking roasted pork in a vinegar-based
savoury sauce.
Tender, melt-in-the-mouth, but non-Filipinos be warned, it's
traditional to enjoy the pork fat and skin as well as the lean meat, in
this dish.
