Dinuguan, also known as "blood stew," is pork and pork intestine cooked in a sauce made from the pig's blood, with a hint of chilli.
Not the usual menu choice for non-Filipinos, in fact it scares the heck out of 'em - but dinuguan is actually very tasty - and very popular in the Philippines. We dare ya.
Note: some varieties of dinuguan sold in New Zealand do not use the intestine, as it takes a high level of skill to prepare. Dinuguan made with pork meat tends to have a different, milder taste.
